How to Make A Magical Vegan Stew with Sprouted Lentils
This fabulous vegan stew recipe is incredibly quick and effortless to whip up, bursting with incredible flavours.
I must say, the sprouted lentils were a delightful surprise. We'd never cooked with them before, but they added such a delicate texture to the stew that we absolutely adored.
Alongside these delicious lentils, we have the pleasure of using Black Magic, Cavolo Nero. It's our absolute favorite type of Kale to incorporate into soups because it has an absolutely delightful flavor. To complete our meal, we enjoyed the lentil stew with some crusty bread and a fresh salad.

Ingredients needed:
- 3 tablespoons extra-virgin olive oil
- 1 small yellow onion
- 2 medium carrots
- 2 ribs celery
- 2 cloves garlic
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- ¼ teaspoon red pepper flakes
- Fine sea salt and freshly ground pepper
- 1 litre vegetable stock
- 450 gram can diced tomatoes with their juices
- 450 grams of sprouted lentils
- 1 bunch Black Magic Kale, tough stems removed, cut into bite-sized pieces
- Crusty bread, for serving
Cooking Instructions:
- Dice a vibrant yellow onion. Peel and dice two carrots and two ribs of celery. Finely mince two cloves of garlic.
- In a large pot with a sturdy bottom, heat up some olive oil over medium-high heat. Add the diced onion, carrots, and celery. Sauté them, stirring occasionally, until they become tender and the onion turns translucent, which should take about three minutes.
- Stir in the minced garlic and let it cook until it becomes fragrant, which will take around a minute.
- Now, it's time to add the cumin, coriander, and red pepper flakes (if desired). Keep stirring the mixture continuously for about two minutes, until the aroma of the spices fills the air. Season with salt and pepper according to your taste.
- Next, add the vegetable stock, tomatoes along with their juices, and lentils to the pot. Give everything a good stir and let it come to a boil, occasionally stirring it. Once it reaches a boil, reduce the heat to low and let it simmer for 20-25 minutes, until the mixture thickens.
- Finally, add the kale and let it simmer over low heat for an additional 1-2 minutes until it wilts. Don't forget to taste it and generously season with salt and pepper.
- To serve, ladle the delicious soup into shallow bowls and pair it with some crusty bread. If you have any leftovers, simply store them in an airtight container in the refrigerator for up to three days, or freeze them for up to three months.
- When reheating the soup, you might need to add a little water as it tends to thicken over time.
